Cajun corn on the cob is an easy side dish with cajun flavor. Fresh and juicy sweet corn is such a summer treat, but it’s even better when slathered in butter and coated in cajun spices! Ready in less than 15 minutes!

A Note About Cajun Seasoning

  • Different cajun seasoning blends can have different levels of salt and spiciness, so it’s best to add it to taste! My homemade cajun seasoning blend is less salty than others, with more flavor, so I like using it for recipes like this because it won’t be overpowering. 

How to Make Cajun Corn on the Cob

  1. Remove the husks, then boil corn for about 5 minutes in salted water, then drain. 
  2. Mix together butter, cajun seasoning, and green onions. Slather it on the hot corn cobs, and enjoy!

Storage & Make Ahead

Storage: Store leftovers in the refrigerator for 3-4 days. 

Freeze: I don’t recommend freezing. 

Reheat: You can reheat corn cobs in the microwave.

Make ahead: You can mix the butter and cajun seasoning a few days in advance.

Ingredients
  

  • 6 ears fresh sweet corn
  • 1 tablespoon salt for boiling water
  • 6 tablespoons unsalted butter softened
  • 1-2 teaspoons cajun seasoning* or to taste
  • 1 green onion thinly sliced

Instructions
 

  • PREP: Bring a large pot of water to a boil and add salt. Remove husks and stringy bits from corn. Thinly slice green onion.
  • BOIL: Boil corn for 5-7 minutes. Drain.
  • MIX: While the corn is boiling, combine butter, cajun seasoning, and green onion.
  • FINISH: Spread cajun butter on the corn, and serve hot.

Notes

  • Different cajun seasoning blends have different levels of spiciness and saltiness, so use it to taste. Make your own homemade cajun seasoning for best results!
  • If fresh corn is out of season, the cajun butter is also delicious on canned or frozen corn!
