Vodka sauce is a rich and creamy tomato pasta sauce. It's made with tomatoes and tomato paste with tons of flavor from garlic, shallots, and crispy pancetta. It's a delicious pasta sauce for pasta night!

Cook pancetta in a sauce pan until crispy. Remove crispy pancetta to a paper towel lined plate. Reserve some oil in the pan.

Sauté shallots in pancetta oil until translucent, softened, and caramelized. Add garlic and cook until fragrant.

Add tomato paste and mix with shallots and garlic. Cook for a few minutes and allow tomato paste to darken and caramelize.

This is where the vodka comes in! Stir it in and scrape up anything stuck to the pan. Allow to simmer and cook off the alcohol. Add in diced tomatoes.

Stir together and let simmer for about 10 minutes, stirring occasionally.

Blend with an immersion blender or a food processor until sauce is smooth.

Add in heavy cream, parmesan and pancetta back to the pan. Stir to combine.

Toss with al dente pasta and a splash of pasta water. Option to add chicken or shrimp for a protein. I've had this with scallops and it was amazing!
