Spinach & Feta Breakfast Wrap

For this recipe you will need: sun dried tomatoes, onion, garlic, Italian seasoning, eggs, red pepper flakes, feta, spinach, & wraps.

Heat about olive oil in a large skillet & sauté onions. Add garlic & cook until fragrant. Add the chopped spinach.


When most of the spinach has wilted, add in sun dried tomatoes. Cook about 5 more minutes. Add salt & pepper to taste. Spread over a plate lined with paper towels & drain. Divide into 8 portions.


Heat same skillet over medium-low heat. Pour in eggs, add in red pepper flakes, & pinch of salt. Scramble eggs. Add in Italian seasoning & mix. Add salt and pepper to taste.


Add equal portions of cooked egg & spinach mixture to each wrap. Add 2 teaspoons of crumbled feta to the top of the egg. Wrap like a burrito.


Heat a large skillet over medium heat. Put the wrap seam side down on the skillet & heat until tortilla is golden brown. Use a plate to weigh down if needed. Flip & brown the other side. Serve.
