Skillet Chicken Thighs with Peppers & Olives

Ingredients

For this recipe you will need: bone-in skin-on chicken thighs, onion powder, oregano & basil, red pepper, red onion, tomatoes, garlic cloves, Sicilian green olives, & Kalamata olives.

In a preheated skillet, sear chicken on the skin side until golden brown & crispy. Season with the seasoning mix, reserving any extra for later. Flip to the other side & sear.

Remove pan from heat. Add in peppers, onions, tomatoes, garlic, green olives, & Kalamata olives to the skillet, tucking some under the chicken thighs. Sprinkle the remaining seasoning over.

Bake for 40 minutes. To keep your chicken skin crispy, elevate the thighs on top of the vegetables so the skin side isn't sitting in sauce & bake skin side up.

Serve hot! Add it over rice or pasta to absorb all those delicious juices. Pair it with a green salad with a light vinaigrette.
