These zesty tacos are quick, easy, and full of flavor!  Seasoned shrimp topped with chimichurri sauce and a creamy jalapeño avocado slaw.  Ready in 30 minutes!

Ingredients

parsley cilantro oregano garlic shallot lime red onion red wine vinegar shredded cabbage chili powder onion powder red pepper

shrimp tortillas cotija cumin paprika jalapeño

Add ingredients for chimichurri to a food processor and pulse until finely chopped. Scrape down sides. Mix in olive oil and red pepper flakes.

Mash avocado with fresh lime juice, salt, and pepper. Mix in diced jalapeño and shredded cabbage.

Pat shrimp dry with a paper towel. Combine seasonings for shrimp, then toss with shrimp to evenly coat.

Cook shrimp a few minutes on each side until cooked throughout. Make sure your skillet is very hot before adding shrimp.

Warm tortillas. Add avocado jalapeño slaw, shrimp, and chimichurri to a tortilla. Top with diced pepper, sliced red onion, and cotija cheese. Enjoy!
