Cut the sweet potato into bite sized pieces. One half inch cubes work well. You don't have to peel the potatoes.
Toss the sweet potato cubes with seasonings. Heat a large cast iron pan over medium heat until fully hot. Add olive oil and heat for about 30 seconds.
Add sweet potatoes to the pan in a single layer and cook for about 20-25 minutes, stirring occasionally. Cook until the sweet potato pieces are fork tender, and browned.
Top sweet potatoes with fresh herbs and serve warm!
