Why you'll love roasted butternut squash soup

- Only 3 ingredients needed! -  Rich and creamy without being heavy.  - Freezes well so it's perfect for saving portions for later.  - Only about 10 minutes of active time!

Ingredients

- butternut squash - olive oil - vegetable stock  - onion - salt and pepper

*use good quality vegetable broth/stock *Add in other veggies! Red pepper is my favorite to throw in with the squash. 

Cut the butternut squash soup in half lengthwise. Scoop out the seeds. Cut the onion into quarters. Brush with olive oil and sprinkle with salt and pepper.

Roast the butternut squash until its fully cooked and fork tender with caramelized edges. If the onion starts to burn, you can remove it while the squash finishes roasting.

Let squash cool enough to handle. Scoop out the flesh into a pot and add vegetable broth and roasted onion. Discard the peeling.

Blend the soup until smooth with an immersion blender. You can also transfer to a blender, but be careful when blending hot liquids!

Taste and adjust seasonings if necessary. Let the soup simmer for a few minutes to come together and thicken. Top with desired toppings like fresh herbs, toasted nuts, or a swirl of cream.
