1. Russet or Yukon Gold potatoes 2. Vegetable stock 3. Heavy whipping cream 4. Butter Optional toppings: bacon, shredded cheese, sour cream, chives

This soup is only 4 ingredients, so use really tasty high quality vegetable stock Homemade is best. 

Wash and peel your potatoes. Cut them un into uniform chunks. Boil them in vegetable stock until they are fork tender.

Blend the soup in a blender or with an immersion blender until smooth and creamy. If you want a chunkier texture, you can leave some potato pieces.

Swirl in butter and cream and simmer the soup until it has thickened. If it becomes too thick, you can add another splash of stock.
