breadcrumbs milk onions garlic eggs pecorino parmesan parsley ground beef ground pork Italian sausage

Mix breadcrumbs and milk and let sit to thicken. Combine all ingredients for meatballs and gently mix with fingertips. To not overmix.

Using an ice cream scoop or a 1/4 cup measuring cup, scoop out about 24 meatballs. Gently roll them into a ball and place on a baking sheet.

In a hot cast iron skillet, sear meatballs on all sides until a browned crust develops. The meatballs don't need to be fully cooked at this stage.

Transfer meatballs to sauce to simmer and finish cooking. You can also finish baking the meatballs in the oven at 350°F for about 20 minutes until cooked through.
