This is an American take on a traditional Greek salad, using lettuce and za'atar seasoning for chicken. The chicken comes out really flavorful and the greek vinaigrette is the perfect tangy touch. Lots of big flavor with feta cheese, kalamata olives, and roasted red peppers.
Season the chicken. Sear on both sides until browned, then transfer to the oven to finish cooking for about 10-15 minutes.

While the chicken is baking, prepare your other ingredients. Chop the onion, bell pepper, lettuce, cucumber, olives, roasted red peppers, and tomatoes.

Add all vinaigrette ingredients to a jar and shake well to incorporate. If you want a creamier Greek dressing, you can blend with an immersion blender until it thickens.

Slice chicken breasts and assemble the vegetables for the salad. I like to toss the salad with the Greek dressing, then put the sliced chicken breast on top!
