Easy Potato Soup

This Easy 4-Ingredient Potato Soup recipe is so creamy and delicious! It’s made with only a few simple ingredients - potatoes, vegetable stock, cream, and butter - and is ready in under 30 minutes. It's the perfect canvas for adding all your favorite toppings!

Ingredients

1. Russet or Yukon Gold potatoes 2. Vegetable stock 3. Heavy whipping cream 4. Butter Optional toppings: bacon, shredded cheese, sour cream, chives

This soup is only 4 ingredients, so use really tasty high quality vegetable stock Homemade is best. 

Wash and peel the potatoes and cut them into approximately 1.5 inch pieces. Add potatoes and stock to a large pot and bring to a boil. Cook until potatoes are fork tender.

Purée the soup with an immersion blender or blender until smooth. You can also choose to leave in some potato pieces for a chunkier texture.

Return the soup to a simmer and add in cream and stir. Simmer until the soup reaches the desired consistency.
