Chicken Sausage Breakfast Sandwiches

Why you'll love  this recipe:

- Breakfast but healthier  - Perfect for on the go - Great for meal prep, make & freeze for morning meals

For this recipe you will need: ground chicken, brown sugar, salt,  thyme, sage, paprika, onion & garlic powders, cayenne pepper, English muffins, cheese, & eggs.

Mix all seasonings together, then mix in ground chicken. Don't overwork them. Portion out 6 patties of equal size into roughly shaped balls (No need for perfection, we will be shaping in the pan).

Place chicken patty in a preheated skillet. Gently shape into a patty the size of your english muffins. Cook about 5 minutes on each side, until cooked throughout, & some browning has developed.

Crack an egg into an egg mold, & gently break the yolk & swirl with a fork. Salt & pepper to taste. Cook most of the way through, then flip and cook until just set.

Lightly toast English muffins. Once all parts have cooled, assemble each sandwich with the english muffin, egg, sausage patty & cheese. Wrap tightly in foil, & put in a freezer bag.

When you are ready to serve, unwrap and gently break apart the components & put in a toaster oven for about 10 minutes until heated throughout.
