For this recipe you will need: ground chicken, brown sugar, salt, thyme, sage, paprika, onion & garlic powders, cayenne pepper, English muffins, cheese, & eggs.
Mix all seasonings together, then mix in ground chicken. Don't overwork them. Portion out 6 patties of equal size into roughly shaped balls (No need for perfection, we will be shaping in the pan).
1
Place chicken patty in a preheated skillet. Gently shape into a patty the size of your english muffins. Cook about 5 minutes on each side, until cooked throughout, & some browning has developed.
Crack an egg into an egg mold, & gently break the yolk & swirl with a fork. Salt & pepper to taste. Cook most of the way through, then flip and cook until just set.
3
Lightly toast English muffins. Once all parts have cooled, assemble each sandwich with the english muffin, egg, sausage patty & cheese. Wrap tightly in foil, & put in a freezer bag.
