Brown sausage in a hot skillet then set aside. Season chicken thighs and brown them in the same pot then set aside.

Mix oil and flour in the pot and cook over medium-low heat. Stir almost constantly for 30-45 minutes until it reaches a deep rich chocolate color.

Add chopped holy trinity to the pot with the roux. Mix well and cook until vegetables are softening.

Slowly whisk in broth until it is smooth and incorporated with the roux. Add chicken and sausage to the pot with bay leaves, green onions, and parsley. Simmer for 30 minutes.

Remove chicken from the pot and let cool slightly. Debone the chicken and discard bones and cartilage. Chop chicken and add back to the pot.
