Cajun Shrimp Cocktail

For this recipe you will need: horseradish, hot sauce, olive oil, cajun seasoning, ketchup, shrimp, lemons, garlic, and shrimp.

To make the homemade cocktail sauce, combine all the ingredients for the sauce in a small bowl and mix well.

Refrigerate the cocktail sauce until ready to use. While the sauce is chilling, preheat the oven to & place the rack in the middle position

Next get your shrimp ready. You can peel the shrimp yourself, or buy shrimp that is already peeled and deveined for you.

Cover a large baking sheet with parchment or aluminum foil. Pat the shrimp dry with paper towels and toss in olive oil, then in cajun seasoning and lemon zest.

Roast the shrimp until they are an opaque pink and just cooked through. Shrimp will curl when cooked.

Serve on a serving platter with a sprinkling of fresh parsley and lemon wedges so your guests can add a squeeze of fresh lemon juice.
