Cajun Salmon Alfredo Pasta

Ingredients

Olive oil, white wine, roasted red peppers, spinach, sun dried tomatoes, mushrooms, cajun seasoning, salmon, parmesan, chicken broth, garlic, shallot

Pat down salmon and dry with paper towels. Coat with Cajun seasoning. Heat a large saucepan over medium-high heat.

Brush 1 tablespoon of olive oil on salmon. Sear salmon for about 5 minutes on each side, until it forms a blackened crust. Remove salmon and set aside.

In the same pan, cook the mushrooms until browned. Turn heat to medium low and add in shallots. Sauté shallots until caramelized. Add garlic and cook while stirring until fragrant.

Add white wine to deglaze and scrape up any browned bits (fond) from the bottom of the pan. Cook about 2-3 minutes, stirring occasionally, allowing alcohol to burn off.

Add in chicken broth and slowly stir in heavy cream. Mix to combine into a creamy sauce.

Add in spinach, sun dried tomatoes, & roasted red peppers. Bring to a simmer and cook on low for about 5-10 minutes.

Stir in parmesan cheese and allow to melt into the sauce. Add salmon back to the pan with juices and break up with a wooden spoon into smaller chunks.

Combine with al dente cooked pasta, and a splash of pasta water as needed. Enjoy immediately. Pair with a sauvingnon blanc.
