Red beans and rice is a classic cajun dish. These beans are savory, meaty, filling. They simmer on the stove with bacon and ham, adding so much flavor. Red beans tastes even better the next day and freeze really well for later.
Soak beans in water overnight to start hydrating them. This will help the cooking process go quicker. Drain and rinse the beans before you cook.

Crisp the bacon and set it aside on paper towels. Sear the sausage in bacon fat until browned on both sides and set aside.

Sauté the onions, bell pepper, and celery, aka the cajun holy trinity, until softened. Then add in garlic to cook.

Add bacon and sausage to the pot with beans, ham, dried seasonings, parsley, green onions, bay leaves and chicken broth. Simmer uncovered for 2 hours.

Taste and adjust seasonings. Stir in remaining parsley and green onions. Remove bay leaves. Smash some beans against the side of the pot to thicken.

Serve Louisiana red beans over white long grain rice topped with green onions and parsley. Add a dash of hot sauce. Serve with cornbread or pork chops!
