Creamy and cheesy cajun pasta with onions, peppers, garlic, and spicy andouille sausage! This cajun pasta recipe is decadent and delicious, and is ready in an hour. You can even swap out for a different kind of sausage, or add chicken or shrimp instead.
Sear sausage in a hot cast iron skillet until browned on both sides. Set aside. You can use any cajun sausage, or change it out for chicken or shrimp!
Melt butter and add onions, celery, and peppers. Sauté until vegetables are softening. Add in garlic and cook for another minute.
Flour to make a light roux. Whisk in chicken broth, half and half, and seasonings. Stir in cheeses and let sauce simmer until it reduces.
Add sausage back to the pan. Once the sauce has thickened, toss with your cooked pasta and a splash of pasta water. Top with parsley or green onions. Enjoy!
