Sear the beef for a few minutes on all sides, developing a browned crust. Remove the roast from the pot and set aside.

Add onions to the pot & saute until turning translucent, stirring occasionally. Use the liquid formed to deglaze the pan. Add garlic and saute for 2-3 minutes, stirring frequently.
Add roast back into the pot, & cover with beef broth. Add in fresh herbs. Bring to a boil, reduce heat to low & simmer covered for 3-4 hours.

When roast is just about fall apart tender, make the gravy. Remove some broth and whisk in some flour until all the lumps are gone. Add the thickened gravy back into the pot and stir.
