This sausage brown gravy is SO rich, savory, and delicious. Make it with your favorite sausage, or give it a cajun kick with andouille sausage. It's great for biscuits and gravy, mashed potatoes, or pork chops!

Ingredients

your favorite sausage unsalted butter all purpose flour bell pepper onion celery garlic beef broth cajun seasoning fresh herbs

Brown sausage in a hot cast iron skillet. Break up the sausage as it cooks into smaller pieces. Remove sausage and set aside.

Melt butter in the same skillet, and whisk in flour a little at a time. Cook while stirring to form a medium light brown roux. If you want a lighter gravy, cook to a lighter color.

Add sausage back to the pan with diced onions, celery, and bell pepper. Cook until softened. Add in garlic in the last minute.

Whisk in broth slowly, making sure all the flour is incorporated. Simmer until gravy thickens to desired consistency. Taste and adjust seasoning.
