Brown sausage in a hot cast iron skillet. Break up the sausage as it cooks into smaller pieces. Remove sausage and set aside.

Melt butter in the same skillet, and whisk in flour a little at a time. Cook while stirring to form a medium light brown roux. If you want a lighter gravy, cook to a lighter color.
