The secret to a delicious pot roast is to sear the meat first before slow braising it. This adds an extra delicious layer of flavor. This pot roast recipe only needs a few simple ingredients and is simply mouth watering!

Ingredients

beef chuck roast avocado or olive oil onions garlic beef stock flour fresh herbs rice, potatoes, or carrots for serving

Season your chuck roast and sear it on all sides until a browned crust develops. Don't skip this step - it adds so much extra flavor!

Set the beef aside, and sauté the onions in the same pot until translucent. Then add the garlic. Scrape up any browned bits from the bottom of the pan.

Add roast back to the pot with beef broth, and fresh herbs if using. Bring it up to a boil, then reduce heat to a simmer.

Cover the pot and cook until pot roast is fall apart tender with a fork. This could take 2-4 hours, and the time is pretty forgiving. It's hard to overcook it!

Remove some broth and whisk in flour. Pour back into the pot. Simmer for a few minutes until gravy has thickened.
