    Bacon Cheeseburger Sliders

    These little bacon cheeseburger sliders are packed with crispy salty bacon, gooey American cheese, crunchy onions, tangy pickles, and a spicy creamy sauce. Easy to make for a crowd pleasing snack-etizer. Perfect for the big game!

    How to make bacon cheeseburger sliders

    These sliders are easy to throw together and will leave people coming back for more. Might want to double up and make two batches! I love making these for watching football on Sundays. Let's start with the bacon.

    How to cook bacon in the oven?

    First, preheat the oven to 400°F. Lay out the uncooked bacon on a baking sheet covered in foil. Alternatively, you can put the bacon on a cooling rack on top of a baking sheet, which cuts down on some grease. Cook the bacon for about 15-20 minutes, or to your desired crispiness. I like my bacon extra crispy, bordering burnt. Turn the bacon over once during cooking for evenness. I prefer making bacon in the oven over the stove. It is easier and requires less attention. And less grease splatters all over your stove make for an easier cleanup! WINNING. When the bacon is cooked, crumble or give it a rough chop and set aside. 

    While the bacon is still in the oven, heat up a skillet over medium-high heat. Season the beef with salt, pepper, garlic powder, and onion powder. Cook the beef through, breaking it up as you go. Drain the fat if needed, and set the beef aside.

    Mix all the ingredients for the burger sauce together and set aside. This is one of our favorite burger condiments. It's like honey mustard with a kick.

    Now it's time to assemble these babies. Lay the bottom buns in a 9x9 baking dish. Don't break the buns apart yet! I find it's easier to cook them together, and then slice before serving. Spread half of the burger sauce on the bottom buns. Next layer on the onions and pickles. Spread out the cooked ground beef on top of that, then lay the cheese and bacon on top. Spread the remaining sauce to the underside of the top buns, and complete the stack.

    What kind of buns to use for sliders?

    A note about the buns. I used Hawaiian slider rolls that were 9 to a pack, and pre-sliced. If you have trouble finding these, you can use the 12 count rolls. These don't usually come pre-sliced, so you will have to cut them down the middle without separating each individual roll. If you use the 12 pack, use a larger 9x13 dish baking dish.

    Mix together the melted butter and garlic powder, and spread it over the tops of the buns with a basting brush. I like these silicone basting brushes. They are easier to clean than the ones with natural bristles, and dishwasher safe. Sprinkle the sesame seeds over the buns. Loosely cover with aluminum foil, and bake at 350°F for about 20 minutes.

    Slice the sliders while in the baking dish, and lift out with a spatula. Serve hot to your salivating guests!

    Can I make these sliders ahead of time?

    I don't recommend assembling and baking the sliders ahead of time, or they will become soggy and the buns don't reheat well. You can cook the bacon and ground beef ahead of time, then assemble everything and bake the day you want to serve.

    Can I use cheddar instead of American cheese?

    Yep. You can really use any kind of cheese you want with these sliders. BUT, our personal favorite for bacon cheeseburgers is always American cheese. It melts beautifully and is extra ooey gooey and creamy.

    Ingredients
      

    • 1 pound thick cut bacon
    • 1 pound lean ground beef
    • ½ teaspoon onion powder
    • ½ teaspoon garlic powder
    • salt and pepper to taste
    • ½ cup onion chopped
    • ½ cup pickles chopped
    • 4-6 slices American cheese
    • 9 Hawaiian roll slider buns

    Burger sauce:

    • ½ cup mayonnaise
    • 2 tablespoons yellow mustard
    • 2 tablespoons dijon mustard
    • 2 tablespoons honey
    • 1 tablespoon Sriracha
    • 1 teaspoon onion powder
    • 1 teaspoon paprika

    For topping:

    • 1 tablespoon unsalted butter melted
    • ¼ teaspoon garlic powder
    • ½ teaspoon sesame seeds

    Instructions
     

    • Cook: Preheat the oven to 400 degrees. Cook bacon in the oven for 15-20 minutes, turning halfway through. In a skillet, cook ground beef with garlic powder, onion powder, and salt and pepper to taste. Crumble and break up ground meat as it cooks, and cook through.
    • Prep: Mix together all ingredients for burger sauce, and set aside. Give the bacon a rough chop. 
    • Assemble: Align bottom buns in a 9x9 baking dish and spread the burger sauce over it. Sprinkle a layer of onions and pickles over the sauce. Spread the cooked beef out over the pickle and onion layer. Lay cheese over the beef. Sprinkle the bacon over the cheese. Add the remaining sauce to the top of the buns and lay on top of the bacon layer. Mix together the butter and garlic powder and brush onto to top of the buns. Sprinkle with sesame seeds. 
    • Bake: Cover with foil and bake at 350° F for about 20 minutes. Slice and serve.
